
Since the age of 15, Brett Graham has been creating culinary delights in the kitchen. The Australian Michelin starred chef started work in a fish restaurant, where he built a foundation of technical skills. From there, he moved to Sydney, where Brett worked for Liam Tomlin at the highly celebrated Banc restaurant. Banc, located in a renovated bank, is a stylish, popular restaurant specialising in top-quality steaks and burgers. While working at the restaurant, Brett developed his culinary skills in gastronomy which later led him to open his own restaurant.
While working at Banc, Brett won the Josephine Pignolet Award, a coveted title for the best young chefs of the year. Winning the accolade kick-started Brett's career, and earned him a trip to the United Kingdom where he impressed the owners of restaurant The Square enough to offer him a job. At the Michelin Starred restaurant, which specialises in modern cuisine, Brett was awarded the Young Chef of the Year in 2002. During this period of his career, he worked under esteemed chef, Phillip Howard.
At present, Brett is the Head Chef of The Ledbury, a two Michelin starred restaurant in London - The Ledbury was even featured in S. Pellegrino World's 50 Best Restaurants. Opened in 2005 by Brett, the restaurant has received critical acclaim and within the opening year earned its first Michelin star. The second followed in 2010, as well as the Square Meal BMW Restaurant of the Year Award. The dishes have been described by prominent food critics as "scrumptious", "seriously good" and a 9.25 out of 10. Harden's restaurant guide titled The Ledbury as "genius", and marked it highly for food, service and ambience. Such success has been credited to Brett's attention to detail and culinary skill.
